INGREDIENTS

  • 1 kg chicken breast
  • 15 g salt
  • 1 tsp thyme
  • 1tsp dijon mustard
  • 30 ml sunflower oil

Side dishes:

  • 0.5 kg beef mince
  • 250 g bird livers
  • 100 g bird hearts
  • 12 g salt
  • 1 g black pepper
  • 1 large clove of garlic
  • 0.5 g allspice
  • 0.5 g cinnamon
  • 50 ml white wine
  • 40 g Kefalotyri cheese coarsely grated
  • 40 g gouda cheese coarsely grated
  • 50 ml extra virgin olive oil
  • 1 full tbsp pine nuts
  • 1 tbsp walnuts coarsely cut
  • Chestnuts roasted
  • Baby potatoes roasted

For the sauce:

  • 250 g yogurt
  • 70 g heavy cream
  • 60 g feta cheese, grated
  • 1 clove of garlic
