Sausage burger

Sausage burger; an original idea for a burger with a sausage taste. The synthesis of the burger pattie is directly based on a recipe for sausage with leeks from Karditsa, Greece, our hometown. INGREDIENTS

  • 800 gr pork rump with the fat
  • 200 gr pork belly
  • 2 gr black pepper
  • 0.25 gr allspice
  • 0.5 gr cumin
  • 1.5 gr sweet paprika
  • 150 gr leeks, finely chopped
  • 50 gr grated onion
  • 18 gr sea salt
  • 50 ml very cold water
  • 5 gr guar gum
  • 20 gr rusk crumbs
  • 1 slice of kasseri cheese per patty

Yogurt sauce:

  • 200 gr strained yogurt
  • 80 gr heavy cream
  • 2 tbsp cucumber pickled, diced
  • 1 tsp spearmint, chopped
  • 1 tsp spicy mustard

Politiki salad:

  • 300 gr white cabbage in thin slices
  • 150 gr red cabbage in thin slices
  • 60 gr Florina pepper in thin slices
  • 60 gr carrot coarsely grated
  • 0.5 gr small radish, grated
  • 1 clove of garlic
  • 30 ml olive oil
  • 10 ml white vinegar
  • 0.5 level tsp sea salt

For the stacking:

  • Mild mustard with honey
