Pulled pork shank burger

Pulled pork shank burger recipe. The pork shank was slow-cooked in the wood-fired oven until its melting point... Its taste? Fantastic!! It can give a beautiful and unique kind of burger. The combination of the ingredients for this burger creates a beautiful and amazing taste. Let's see the entire process!

INGREDIENTS

  • 3 large pork shanks
  • 3-4 burger buns
  • 20 gr sea salt
  • 3 gr black pepper
  • 3 gr coriander
  • 4 gr granulated garlic
  • 1.5 tsp oregano
  • 2 bottles of beer, 500 ml each
  • 1 wine glass soy sauce
  • 3 small onions cut into four
  • 4 bay leaves
  • 3-4 celery sticks
  • 2 tbsp sunflower oil

For the sauce:

  • 2 ripe tomatoes cut into four (300 gr)
  • ½ green pepper, sliced
  • 2 small onions cut into four
  • 0.5 gr allspice
  • 8 gr sea salt
  • 1 orange slice (round)
  • 30 ml sunflower oil
  • 1 Florina pepper, jarred
  • 2-3 drops green tabasko sauce

For the salad:

  • Finely chopped cabbage

PREPARATION

Light your woodfired oven to preheat. Meanwhile, you can prepare your shanks. First, prepare the spices, salt, pepper, granulated garlic, coriander, and oregano, and season the shanks. Then, place them inside a clay vessel and pour beer until they are half-covered. Add the rest of the ingredients, soy sauce, onion, bay leaves, celery, flour, and sunflower oil, and cover the vessel. 

Next, prepare the tomato sauce. Put all the ingredients inside a small clay vessel by placing the orange slice on the bottom.

When the oven is ready and the temperature has dropped down to 200°C after the removal of the coals, cook the shanks for 4-5 hours or more depending on your oven and how fast the temperature drops. Cook the tomato sauce at the same time for 2 hours. The tomato sauce will be our first. Cover it and leave it to cool down before pulping it by using an immersion blender. Then add the pulped Florina pepper. When you’re finished, add 2-3 drops of tabasco sauce and stir.

Chop the cabbage and finely slice the potatoes. Mix the potatoes with some oil and cook them in the woodfire oven right in the beginning, when the oven has the highest temperature.

After many hours of slow cooking, the pork shanks are ready. Leave them to cool down and remove them from their juice. Pull the meat, which after a long-hour cooking it has melted. Grill the burger buns as well.

Stack your burger in this order: Bun, sauce, pulled pork shank, some juice from the shanks, baked potatoes, finely chopped cabbage, some juice from the shanks, bun
